Ingredients:
- 1 lb peeled and deveined shrimp
- 1 small seedless watermelon, cubed
- 1 red bell pepper, seeded and cut into chunks
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon minced ginger
- 1/2 teaspoon chili flakes (or more to taste)
- Salt and black pepper to taste
Instructions:
- In a bowl, combine the shrimp with 1 tablespoon olive oil, 1/2 teaspoon chili flakes, salt, and pepper. Marinate for at least 15 minutes.
- Thread the shrimp, watermelon chunks, and red bell pepper onto skewers, alternating ingredients.
- In a small bowl, whisk together the lime juice, remaining olive oil, honey, ginger, and remaining chili flakes. Season with salt and pepper.
- Grill or broil the skewers for 2-3 minutes per side, until shrimp are pink and cooked through.
- Drizzle skewers with the basil-lime dressing and garnish with fresh basil leaves.
