Spicy Shrimp and Waffle Sandwiches with Maple-Bourbon Glaze
Ingredients:
For the Waffles:
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup buttermilk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
For the Shrimp:
- 12 large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon chili flakes
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cloves garlic, minced
- 2 lemons, juiced
For the Maple-Bourbon Glaze:
- 1/2 cup pure maple syrup
- 2 tablespoons bourbon whiskey
- 1 tablespoon unsalted butter, softened
- 1 teaspoon vanilla extract
Instructions:
- Preheat your waffle iron according to the manufacturer's instructions.
- In a large bowl, whisk together flour, baking powder, salt, and sugar. In a separate bowl, whisk together eggs, buttermilk, melted butter, and vanilla extract. Add wet ingredients to dry ingredients and stir until just combined. Do not overmix.
- Cook waffles according to the manufacturer's instructions.
- Meanwhile, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, or until pink and cooked through.
- In a small bowl, mix together chili flakes, smoked paprika, salt, pepper, garlic, and lemon juice.
- To make the maple-bourbon glaze, whisk together maple syrup, bourbon whiskey, softened butter, and vanilla extract in a small saucepan. Bring to a simmer over medium heat and cook for 2-3 minutes, or until slightly thickened.
- Assemble sandwiches by placing a cooked waffle on a plate, topping with a cooked shrimp, and drizzling with maple-bourbon glaze. Serve immediately and enjoy!
