Spicy Shrimp and Waffle Cones

Ingredients:
- For the Waffle Cones:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup milk
- 4 tablespoons unsalted butter, melted
- For the Spicy Shrimp:
- 12 large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1/2 teaspoon ground cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- For the Avocado Salsa:
- 3 ripe avocados, diced
- 1 lime, juiced
- 1 red onion, thinly sliced
- 1 jalapeño pepper, seeded and finely chopped
- Salt and pepper to taste
- For the Pickled Red Onions:
- 1 large red onion, thinly sliced
- 1 cup white vinegar
- 1/4 cup granulated sugar
- 1 teaspoon salt
Instructions:
For the Waffle Cones:
- Preheat your waffle iron according to the manufacturer's instructions.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together eggs, milk, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Cook the waffle batter in the iron for 3-5 minutes or until crispy.
- Repeat the process to create more cones.
For the Spicy Shrimp:
- In a medium bowl, whisk together olive oil, cumin, smoked paprika, and cayenne pepper.
- Add the shrimp to the marinade and toss to coat.
- Season with salt and pepper to taste.
- Grill or pan-fry the shrimp until pink and cooked through.
For the Avocado Salsa:
- In a large bowl, combine diced avocado, lime juice, red onion, jalapeño pepper, salt, and pepper.
- Stir gently to combine.
- Taste and adjust seasoning as needed.
For the Pickled Red Onions:
- In a medium saucepan, combine vinegar, sugar, and salt.
- Bring to a boil over high heat.
- Reduce the heat to low and add sliced red onion.
- Simmer for 5-7 minutes or until slightly caramelized.
Assembly:
- Place a waffle cone on each plate.
- Fill with spicy shrimp, avocado salsa, and pickled red onions.
- Serve immediately and enjoy!
