Spicy Shrimp and Waffle Cones

A creative brunch dish featuring crispy waffle cones filled with spicy shrimp, creamy avocado salsa, and pickled red onions.

Spicy Shrimp and Waffle Cones

Servings: 4

Ingredients:

  • For the Waffle Cones:
    • 1 cup all-purpose flour
    • 2 tablespoons sugar
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 2 large eggs
    • 1 cup milk
    • 4 tablespoons unsalted butter, melted
  • For the Spicy Shrimp:
    • 12 large shrimp, peeled and deveined
    • 1 tablespoon olive oil
    • 1/2 teaspoon ground cumin
    • 1/4 teaspoon smoked paprika
    • 1/4 teaspoon cayenne pepper
    • Salt and pepper to taste
  • For the Avocado Salsa:
    • 3 ripe avocados, diced
    • 1 lime, juiced
    • 1 red onion, thinly sliced
    • 1 jalapeño pepper, seeded and finely chopped
    • Salt and pepper to taste
  • For the Pickled Red Onions:
    • 1 large red onion, thinly sliced
    • 1 cup white vinegar
    • 1/4 cup granulated sugar
    • 1 teaspoon salt

Instructions:

For the Waffle Cones:

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together eggs, milk, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Cook the waffle batter in the iron for 3-5 minutes or until crispy.
  6. Repeat the process to create more cones.

For the Spicy Shrimp:

  1. In a medium bowl, whisk together olive oil, cumin, smoked paprika, and cayenne pepper.
  2. Add the shrimp to the marinade and toss to coat.
  3. Season with salt and pepper to taste.
  4. Grill or pan-fry the shrimp until pink and cooked through.

For the Avocado Salsa:

  1. In a large bowl, combine diced avocado, lime juice, red onion, jalapeño pepper, salt, and pepper.
  2. Stir gently to combine.
  3. Taste and adjust seasoning as needed.

For the Pickled Red Onions:

  1. In a medium saucepan, combine vinegar, sugar, and salt.
  2. Bring to a boil over high heat.
  3. Reduce the heat to low and add sliced red onion.
  4. Simmer for 5-7 minutes or until slightly caramelized.

Assembly:

  1. Place a waffle cone on each plate.
  2. Fill with spicy shrimp, avocado salsa, and pickled red onions.
  3. Serve immediately and enjoy!
