Spicy Shrimp and Sweet Potato Skewers with Coconut Lime Sauce

These vibrant skewers combine sweet, spicy, and tangy flavors for a delightful summer meal.

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 1 red bell pepper, seeded and cut into chunks
  • 1/4 cup olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Coconut Lime Sauce:

  • 1/2 cup coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1/4 teaspoon grated ginger
  • Pinch of salt

Instructions:

  1. In a large bowl, combine the shrimp, sweet potatoes, and bell pepper.
  2. Drizzle with olive oil and season with chili powder, cumin, paprika, salt, and pepper. Toss to coat evenly.
  3. Thread the vegetables and shrimp onto skewers.
  4. Preheat grill or broiler to medium-high heat.
  5. Grill or broil skewers for 5-7 minutes per side, or until shrimp are pink and cooked through and vegetables are tender.
  6. While skewers are cooking, whisk together all ingredients for the coconut lime sauce in a small bowl.
  7. Serve skewers hot with the coconut lime sauce drizzled on top.
