Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 1 red bell pepper, seeded and cut into 1-inch pieces
- 1/4 cup coconut milk
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 teaspoon grated ginger
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions:
- In a large bowl, whisk together the coconut milk, lime juice, honey, ginger, garlic powder, salt, and pepper.
- Add the shrimp, sweet potatoes, and bell pepper to the marinade, toss to coat. Cover and refrigerate for at least 30 minutes.
- Thread the marinated ingredients onto skewers, alternating between shrimp, sweet potato, and bell pepper.
- Preheat your grill or grill pan over medium heat. Grill the skewers for 5-7 minutes per side, or until the shrimp are cooked through and the vegetables are tender.
- Serve immediately with a dollop of extra coconut-lime glaze.
