Spicy Shrimp and Pineapple Tacos with Mango Salsa
Servings: 4-6 tacos
Ingredients:
- For the shrimp:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 1 tablespoon grated fresh ginger
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika (optional)
- Salt and pepper to taste
- For the pineapple:
- 1 ripe pineapple, sliced into thin rings
- 2 tablespoons brown sugar
- 1 tablespoon chopped fresh cilantro
- For the mango salsa:
- 2 ripe mangos, diced
- 1 red onion, thinly sliced
- 1 jalapeño pepper, seeded and finely chopped
- 2 tablespoons freshly squeezed lime juice
- Salt to taste
Instructions:
- Preheat a grill or grill pan to medium-high heat.
- In a small bowl, mix together the oil, ginger, cumin, smoked paprika (if using), salt, and pepper for the shrimp. Toss with the shrimp until well coated.
- Grill the shrimp for 2-3 minutes per side, until pink and cooked through. Transfer to a plate and let rest.
- In a separate pan, caramelize the pineapple slices over medium heat for 5-7 minutes on each side, until golden brown. Sprinkle with brown sugar and chopped cilantro.
- For the mango salsa, combine all ingredients in a bowl and mix well. Season to taste.
- Warm taco shells according to package instructions.
- Assemble the tacos by placing a few grilled shrimp onto a warmed shell, followed by a slice of caramelized pineapple, a spoonful of mango salsa, and any desired toppings (such as diced avocado or sour cream).
Variations:
- Substitute chicken or pork for the shrimp if preferred.
- Add some heat to your taco with additional jalapeños or hot sauce.
- Experiment with different types of citrus in the mango salsa, such as grapefruit or orange.
