Spicy Shrimp and Pineapple Tacos with Mango Salsa

A fusion of Caribbean and Mexican flavors in a vibrant taco dish, featuring succulent shrimp, caramelized pineapple, and a refreshing mango salsa.

Spicy Shrimp and Pineapple Tacos with Mango Salsa

Servings: 4-6 tacos

Ingredients:

  • For the shrimp:
    • 1 pound large shrimp, peeled and deveined
    • 2 tablespoons vegetable oil
    • 1 tablespoon grated fresh ginger
    • 1 teaspoon ground cumin
    • 1/2 teaspoon smoked paprika (optional)
    • Salt and pepper to taste
  • For the pineapple:
    • 1 ripe pineapple, sliced into thin rings
    • 2 tablespoons brown sugar
    • 1 tablespoon chopped fresh cilantro
  • For the mango salsa:
    • 2 ripe mangos, diced
    • 1 red onion, thinly sliced
    • 1 jalapeño pepper, seeded and finely chopped
    • 2 tablespoons freshly squeezed lime juice
    • Salt to taste

Instructions:

  1. Preheat a grill or grill pan to medium-high heat.
  2. In a small bowl, mix together the oil, ginger, cumin, smoked paprika (if using), salt, and pepper for the shrimp. Toss with the shrimp until well coated.
  3. Grill the shrimp for 2-3 minutes per side, until pink and cooked through. Transfer to a plate and let rest.
  4. In a separate pan, caramelize the pineapple slices over medium heat for 5-7 minutes on each side, until golden brown. Sprinkle with brown sugar and chopped cilantro.
  5. For the mango salsa, combine all ingredients in a bowl and mix well. Season to taste.
  6. Warm taco shells according to package instructions.
  7. Assemble the tacos by placing a few grilled shrimp onto a warmed shell, followed by a slice of caramelized pineapple, a spoonful of mango salsa, and any desired toppings (such as diced avocado or sour cream).

Variations:

  • Substitute chicken or pork for the shrimp if preferred.
  • Add some heat to your taco with additional jalapeños or hot sauce.
  • Experiment with different types of citrus in the mango salsa, such as grapefruit or orange.
