Spicy Shrimp and Pineapple Stir-Fry

Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 cups pineapple chunks
- 2 tablespoons vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon soy sauce
- 1 teaspoon oyster sauce (optional)
- 1/4 teaspoon ground white pepper
- Salt to taste
- 4-6 dried red chili peppers or 1-2 teaspoon sriracha (depending on desired level of heat)
Instructions
Prepare the ingredients
- Peel and devein the shrimp, leaving them whole.
- Cut the pineapple into bite-sized chunks.
Cook the ingredients
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
- Add the onion and cook until translucent (about 3-4 minutes).
- Add the garlic and ginger, cooking for another minute until fragrant.
- Add the pineapple chunks and cook for an additional 2-3 minutes, stirring occasionally.
Assemble the stir-fry
- Add the shrimp to the skillet or wok, season with salt, white pepper, soy sauce, and oyster sauce (if using). Stir well.
- Cook the shrimp until they turn pink (about 2-3 minutes per side).
- If desired, add dried red chili peppers or sriracha during the last minute of cooking to give it an extra kick.
- Serve immediately with your favorite sides.
Variations
- Use fresh pineapple chunks for a juicier texture
- Add sliced bell peppers or chopped carrots for added color and nutrients
- For a creamier sauce, mix in some heavy cream or coconut milk towards the end of cooking
