Ingredients:
- 1 lb. shrimp, peeled and deveined
- 1 pineapple, cored and cut into chunks
- 1 red bell pepper, seeded and cut into chunks
- 1/2 cup chopped red onion
- 1/4 cup olive oil
- 2 tbsp. lime juice
- 1 tbsp. chili powder
- 1 tsp. cumin
- 1/2 tsp. salt
- 1/4 tsp. black pepper
For the Mango Salsa:
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped cilantro
- 1 jalapeño, seeded and minced (optional)
- 2 tbsp. lime juice
- Salt to taste
Instructions:
- In a large bowl, combine shrimp, pineapple chunks, bell pepper chunks, red onion, olive oil, lime juice, chili powder, cumin, salt, and pepper. Toss to coat evenly.
- Thread the mixture onto skewers, alternating between shrimp, pineapple, and bell pepper.
- Preheat grill to medium-high heat.
- Grill skewers for 2-3 minutes per side, or until shrimp are pink and cooked through.
- While skewers are grilling, prepare the mango salsa: Combine diced mango, red onion, cilantro, jalapeño (if using), lime juice, and salt in a bowl. Toss to combine.
- Serve grilled skewers hot with a generous dollop of mango salsa.
