Spicy Shrimp & Pineapple Skewers with Mango Salsa

A vibrant and flavorful dish perfect for summer grilling!

Ingredients:

  • 1 lb. shrimp, peeled and deveined
  • 1 pineapple, cored and cut into chunks
  • 1 red bell pepper, seeded and cut into chunks
  • 1/2 cup chopped red onion
  • 1/4 cup olive oil
  • 2 tbsp. lime juice
  • 1 tbsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

For the Mango Salsa:

  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and minced (optional)
  • 2 tbsp. lime juice
  • Salt to taste

Instructions:

  1. In a large bowl, combine shrimp, pineapple chunks, bell pepper chunks, red onion, olive oil, lime juice, chili powder, cumin, salt, and pepper. Toss to coat evenly.
  2. Thread the mixture onto skewers, alternating between shrimp, pineapple, and bell pepper.
  3. Preheat grill to medium-high heat.
  4. Grill skewers for 2-3 minutes per side, or until shrimp are pink and cooked through.
  5. While skewers are grilling, prepare the mango salsa: Combine diced mango, red onion, cilantro, jalapeño (if using), lime juice, and salt in a bowl. Toss to combine.
  6. Serve grilled skewers hot with a generous dollop of mango salsa.
