Ingredients:
- 1 pound large shrimp, peeled and deveined
- 1 cup pineapple chunks
- 1/4 cup coconut milk
- 2 tablespoons freshly chopped cilantro
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon grated ginger
- 1/4 teaspoon cumin
- Salt and black pepper, to taste
- 12 bamboo skewers
- Vegetable oil for brushing
Instructions:
Prepare the Shrimp and Pineapple:
- In a medium bowl, whisk together coconut milk, soy sauce, honey, ginger, cumin, salt, and black pepper.
- Add the shrimp to the marinade and mix well. Cover and refrigerate for at least 15 minutes.
Assemble the Skewers:
- Preheat grill to medium-high heat.
- Thread a shrimp, a pineapple chunk, and a sprig of cilantro onto each skewer.
- Brush the grill with vegetable oil to prevent sticking.
- Grill the skewers for 6-8 minutes per side or until the shrimp are cooked through.
Serve with Coconut Cilantro Sauce:
- In a small bowl, mix together coconut milk, chopped cilantro, and salt and black pepper to taste.
- Drizzle the sauce over the skewers and serve immediately.
