Spicy Shrimp and Pineapple Skewers

A flavorful and colorful dish perfect for summer BBQs or outdoor events.

Spicy Shrimp and Pineapple Skewers

Servings:

  • 4-6 people

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 1 cup pineapple chunks
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 20 bamboo skewers, soaked in water for at least 30 minutes

Instructions:

  1. In a large bowl, whisk together olive oil, cumin, smoked paprika, salt, black pepper, and cayenne pepper (if using). Add the shrimp and mix until they are well coated with the marinade.
  2. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.
  3. Preheat a grill to medium-high heat. Thread a shrimp, a pineapple chunk, a cherry tomato, and a piece of red onion onto each skewer.
  4. Grill the skewers for 8-10 minutes per side, or until the shrimp are pink and cooked through.
  5. Serve immediately.

Tips:

  • To prevent the bamboo skewers from burning on the grill, rotate them every 2-3 minutes while grilling.
  • Consider serving with a side of your favorite salad or roasted vegetables for a well-rounded meal.
  • For a spicy kick, add more cayenne pepper to the marinade or sprinkle some hot sauce over the shrimp during grilling.
