Spicy Shrimp and Pineapple Skewers

Ingredients:
- 1 pound large shrimp, peeled and deveined
- 1 cup pineapple chunks
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 20 bamboo skewers, soaked in water for at least 30 minutes
Instructions:
- In a large bowl, whisk together olive oil, cumin, smoked paprika, salt, black pepper, and cayenne pepper (if using). Add the shrimp and mix until they are well coated with the marinade.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.
- Preheat a grill to medium-high heat. Thread a shrimp, a pineapple chunk, a cherry tomato, and a piece of red onion onto each skewer.
- Grill the skewers for 8-10 minutes per side, or until the shrimp are pink and cooked through.
- Serve immediately.
Tips:
- To prevent the bamboo skewers from burning on the grill, rotate them every 2-3 minutes while grilling.
- Consider serving with a side of your favorite salad or roasted vegetables for a well-rounded meal.
- For a spicy kick, add more cayenne pepper to the marinade or sprinkle some hot sauce over the shrimp during grilling.
