Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 ripe peaches, sliced
- 1 red bell pepper, seeded and cut into chunks
- 1 red onion, cut into wedges
- 1/4 cup coconut milk
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 teaspoon grated ginger
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions:
- In a bowl, whisk together the coconut milk, lime juice, honey, ginger, chili powder, salt, and pepper.
- Thread the shrimp, peach slices, bell pepper chunks, and red onion wedges onto the soaked wooden skewers, alternating ingredients.
- Place the skewers on a baking sheet lined with parchment paper. Pour half of the coconut-lime glaze over the skewers.
- Grill the skewers for 5-7 minutes per side, or until the shrimp are pink and cooked through. Brush the remaining glaze over the skewers during the last minute of grilling.
- Serve immediately.
