Spicy Shrimp & Peach Skewers with Coconut-Lime Glaze

A sweet and spicy twist on traditional shrimp skewers, featuring juicy peaches and a vibrant coconut-lime glaze.

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 ripe peaches, sliced
  • 1 red bell pepper, seeded and cut into chunks
  • 1 red onion, cut into wedges
  • 1/4 cup coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

  1. In a bowl, whisk together the coconut milk, lime juice, honey, ginger, chili powder, salt, and pepper.
  2. Thread the shrimp, peach slices, bell pepper chunks, and red onion wedges onto the soaked wooden skewers, alternating ingredients.
  3. Place the skewers on a baking sheet lined with parchment paper. Pour half of the coconut-lime glaze over the skewers.
  4. Grill the skewers for 5-7 minutes per side, or until the shrimp are pink and cooked through. Brush the remaining glaze over the skewers during the last minute of grilling.
  5. Serve immediately.
