- 1 pound large shrimp, peeled and deveined

- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- Salt and freshly ground black pepper to taste
- 2 ripe peaches, diced
- 1/2 red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 jalapeño pepper, seeded and minced (optional)
- 2 limes, juiced
- 8 small corn tortillas
- Toppings: avocado slices, sour cream, shredded lettuce
Instructions:
Cook the Shrimp: Heat olive oil in a large skillet over medium heat. Season shrimp with chili powder, cumin, salt, and pepper. Cook for 2-3 minutes per side, until pink and cooked through. Remove from skillet and set aside.
Make the Salsa: In a bowl, combine diced peaches, red onion, cilantro, jalapeño (if using), and lime juice. Season with salt and pepper to taste.
Warm the Tortillas: Heat tortillas in a dry skillet over medium heat for 30 seconds per side, or until warmed through.
Assemble Tacos: Fill each tortilla with cooked shrimp and top generously with peach salsa. Garnish with desired toppings, such as avocado slices, sour cream, and shredded lettuce.
