Spicy Shrimp and Peach Salsa Tacos

A fusion of sweet and spicy, these tacos feature succulent shrimp with a vibrant peach salsa that's sure to tantalize your taste buds.

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and freshly ground black pepper to taste
  • 2 ripe peaches, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 jalapeño pepper, seeded and minced (optional)
  • 2 limes, juiced
  • 8 small corn tortillas
  • Toppings: avocado slices, sour cream, shredded lettuce

Instructions:

  1. Cook the Shrimp: Heat olive oil in a large skillet over medium heat. Season shrimp with chili powder, cumin, salt, and pepper. Cook for 2-3 minutes per side, until pink and cooked through. Remove from skillet and set aside.

  2. Make the Salsa: In a bowl, combine diced peaches, red onion, cilantro, jalapeño (if using), and lime juice. Season with salt and pepper to taste.

  3. Warm the Tortillas: Heat tortillas in a dry skillet over medium heat for 30 seconds per side, or until warmed through.

  4. Assemble Tacos: Fill each tortilla with cooked shrimp and top generously with peach salsa. Garnish with desired toppings, such as avocado slices, sour cream, and shredded lettuce.
