- For the Cilantro-Lime Rice:
- 1 cup cooked rice
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 1 tablespoon olive oil
Instructions:
- Cook the Shrimp: Heat olive oil in a large skillet over medium heat. Season shrimp with chili powder, cumin, salt, and pepper. Cook for 2-3 minutes per side, until pink and cooked through. Set aside.
- Make the Peach Salsa: Combine diced peach, red onion, jalapeno, cilantro, lime juice, and salt in a bowl. Toss to combine.
- Prepare the Cilantro-Lime Rice: In a separate bowl, combine cooked rice, chopped cilantro, lime juice, and olive oil. Gently toss to combine.
- Assemble the Bowls: Divide cilantro-lime rice among bowls. Top with spicy shrimp and generous dollops of peach salsa.
