Spicy Shrimp & Mango Tacos with Cilantro-Lime Crema

A vibrant and flavorful twist on tacos, featuring succulent shrimp, sweet mango, and a tangy cilantro-lime crema. Perfect for a summer evening!

Spicy Shrimp & Mango Tacos with Cilantro-Lime Crema

Yields: 4 servings Prep time: 15 minutes Cook time: 10 minutes

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1 jalapeno pepper, minced (remove seeds for less heat)
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 corn tortillas

For the Cilantro-Lime Crema:

  • 1/2 cup sour cream or plain Greek yogurt
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • Pinch of salt

Instructions:

  1. Prepare the Shrimp: In a bowl, toss shrimp with olive oil, chili powder, cumin, salt, and pepper.
  2. Sauté Vegetables: Heat remaining olive oil in a large skillet over medium-high heat. Add red bell pepper, red onion, and jalapeno pepper and cook until softened, about 5 minutes.
  3. Cook the Shrimp: Add shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque.
  4. Make the Crema: In a small bowl, whisk together sour cream (or yogurt), cilantro, lime juice, garlic, and salt.
  5. Warm Tortillas: Warm tortillas according to package directions.
  6. Assemble Tacos: Fill each tortilla with shrimp mixture, mango, and top with cilantro-lime crema.
