Spicy Shrimp & Mango Tacos with Cilantro-Lime Crema

Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 ripe mango, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 jalapeno pepper, minced (remove seeds for less heat)
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 corn tortillas
For the Cilantro-Lime Crema:
- 1/2 cup sour cream or plain Greek yogurt
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 1 clove garlic, minced
- Pinch of salt
Instructions:
- Prepare the Shrimp: In a bowl, toss shrimp with olive oil, chili powder, cumin, salt, and pepper.
- Sauté Vegetables: Heat remaining olive oil in a large skillet over medium-high heat. Add red bell pepper, red onion, and jalapeno pepper and cook until softened, about 5 minutes.
- Cook the Shrimp: Add shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque.
- Make the Crema: In a small bowl, whisk together sour cream (or yogurt), cilantro, lime juice, garlic, and salt.
- Warm Tortillas: Warm tortillas according to package directions.
- Assemble Tacos: Fill each tortilla with shrimp mixture, mango, and top with cilantro-lime crema.
