- 1 teaspoon grated ginger
- 1/2 teaspoon red pepper flakes (or more to taste)
Instructions:
- Thread shrimp, mango chunks, and bell pepper pieces onto skewers, alternating ingredients.
- In a small bowl, whisk together coconut oil, honey, lime juice, ginger, and red pepper flakes.
- Brush the glaze over the skewers.
- Grill skewers for 2-3 minutes per side, or until shrimp are pink and cooked through.
- Garnish with fresh cilantro and serve immediately.
