Spicy Shrimp and Mango Skewers with Coconut Lime Glaze

These colorful skewers are bursting with flavor! Sweet mangoes, succulent shrimp, and a tangy coconut lime glaze create a perfect summer appetizer or light meal.

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe mangoes, peeled and diced
  • 1 red bell pepper, seeded and cut into chunks
  • 1/4 cup chopped cilantro
  • 2 tablespoons coconut oil
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes (or more to taste)

Instructions:

  1. Thread shrimp, mango chunks, and bell pepper pieces onto skewers, alternating ingredients.
  2. In a small bowl, whisk together coconut oil, honey, lime juice, ginger, and red pepper flakes.
  3. Brush the glaze over the skewers.
  4. Grill skewers for 2-3 minutes per side, or until shrimp are pink and cooked through.
  5. Garnish with fresh cilantro and serve immediately.
