Ingredients:
- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ¼ tsp smoked paprika
- Salt and black pepper to taste
- 1 mango, diced
- ½ red onion, finely chopped
- 1 jalapeño, seeded and minced (adjust to your spice preference)
- ½ cup cilantro, chopped
- 2 limes, juiced
- 8 corn tortillas
- For the avocado crema:
- 1 ripe avocado, mashed
- ¼ cup sour cream or Greek yogurt
- 1 tbsp lime juice
- Salt and black pepper to taste
Instructions:
- Heat olive oil in a large skillet over medium heat. Season shrimp with chili powder, cumin, paprika, salt, and pepper. Cook shrimp for 2-3 minutes per side, until pink and opaque. Set aside.
- In a bowl, combine diced mango, red onion, jalapeño, cilantro, and lime juice. Season with salt to taste.
- To make the avocado crema, blend mashed avocado, sour cream or yogurt, lime juice, salt, and pepper in a food processor until smooth.
- Warm tortillas according to package instructions.
- Fill tortillas with cooked shrimp, mango salsa, and top with avocado crema. Serve immediately and enjoy!
