Ingredients:
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
1 tsp cumin
½ tsp chili powder
¼ tsp salt
¼ tsp black pepper
1 ripe mango, diced
½ red onion, finely chopped
½ cup cilantro, chopped
1 jalapeño pepper, seeded and minced (adjust to taste)
2 tbsp lime juice
Salt and pepper to taste
8 small corn tortillas
Toppings of your choice: shredded lettuce, avocado slices, sour cream, crumbled cotija cheese
Instructions:
Heat olive oil in a large skillet over medium-high heat.
Add shrimp, cumin, chili powder, salt, and pepper. Cook for 2-3 minutes per side, until pink and opaque. Set aside.
In a bowl, combine mango, red onion, cilantro, jalapeño, lime juice, salt, and pepper. Toss to coat.
Warm tortillas in a dry skillet or microwave.
Fill each tortilla with shrimp and top with mango salsa and your desired toppings.
