Spicy Shrimp and Mango Salsa Bowls with Avocado Lime Dressing

A vibrant and flavorful dish combining succulent shrimp, sweet mango salsa, and a creamy avocado lime dressing. Perfect for a quick and satisfying meal!

Ingredients:

  • For the Shrimp:
    • 1 lb peeled and deveined shrimp
    • 1 tbsp olive oil
    • 1 tsp cumin powder
    • ½ tsp smoked paprika
    • ¼ tsp cayenne pepper (optional)
    • Salt and black pepper to taste
  • For the Mango Salsa:
    • 1 ripe mango, diced
    • 1 red bell pepper, diced
    • 1/2 red onion, diced
    • 1 jalapeño pepper, seeded and minced (adjust to your spice preference)
    • 1 tbsp chopped cilantro
    • 2 tbsp lime juice
    • Salt and black pepper to taste
  • For the Avocado Lime Dressing:
    • ½ ripe avocado
    • ¼ cup lime juice
    • 2 tbsp water
    • 1 tbsp olive oil
    • Salt and black pepper to taste

Instructions:

  1. Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Add cumin, paprika, and cayenne pepper (if using), season with salt and pepper. Cook shrimp for 2-3 minutes per side, until pink and opaque.

  2. Prepare the Mango Salsa: Combine diced mango, bell pepper, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl. Mix well.

  3. Make the Avocado Lime Dressing: Blend avocado, lime juice, water, olive oil, salt, and pepper in a food processor until smooth and creamy. Adjust consistency with additional water if needed.

  4. Assemble the Bowls: Divide cooked shrimp evenly among serving bowls. Top with mango salsa and drizzle generously with avocado lime dressing.

  5. Serve immediately and enjoy!
