Ingredients:
- For the Shrimp:
- 1 lb peeled and deveined shrimp
- 1 tbsp olive oil
- 1 tsp cumin powder
- ½ tsp smoked paprika
- ¼ tsp cayenne pepper (optional)
- Salt and black pepper to taste
- For the Mango Salsa:
- 1 ripe mango, diced
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 jalapeño pepper, seeded and minced (adjust to your spice preference)
- 1 tbsp chopped cilantro
- 2 tbsp lime juice
- Salt and black pepper to taste
- For the Avocado Lime Dressing:
- ½ ripe avocado
- ¼ cup lime juice
- 2 tbsp water
- 1 tbsp olive oil
- Salt and black pepper to taste
Instructions:
Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Add cumin, paprika, and cayenne pepper (if using), season with salt and pepper. Cook shrimp for 2-3 minutes per side, until pink and opaque.
Prepare the Mango Salsa: Combine diced mango, bell pepper, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl. Mix well.
Make the Avocado Lime Dressing: Blend avocado, lime juice, water, olive oil, salt, and pepper in a food processor until smooth and creamy. Adjust consistency with additional water if needed.
Assemble the Bowls: Divide cooked shrimp evenly among serving bowls. Top with mango salsa and drizzle generously with avocado lime dressing.
