- Salt and black pepper to taste
- Toppings: avocado slices, crumbled cotija cheese, tortilla chips
Instructions:
- In a medium bowl, combine the diced mango, red onion, jalapeño pepper, and cilantro.
- Pour in the lime juice and olive oil, then season with salt and pepper to taste.
- Divide the cooked quinoa among bowls. Top with the shrimp and mango salsa.
- Garnish with avocado slices, crumbled cotija cheese, and tortilla chips as desired.
