Ingredients:
- 4 slices whole wheat bread
- 1 ripe avocado, mashed
- 1/2 cup cooked shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon freshly squeezed lime juice
- 1 tablespoon crumbled feta cheese (optional)
Instructions:
- Toast the bread slices to your desired level of crispness.
- While the bread is toasting, heat the olive oil in a small skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Season with red pepper flakes, cumin, salt, and black pepper.
- Spread the mashed avocado evenly on each toasted slice of bread. Top with the cooked shrimp.
- In a small bowl, whisk together the cilantro and lime juice. Drizzle the dressing over the shrimp and avocado.
- Sprinkle with crumbled feta cheese, if desired.
- Serve immediately and enjoy!
