Spicy Shrimp Tacos with Mango Salsa

Juicy shrimp, sizzling with spice, nestled in warm tortillas and topped with a refreshing mango salsa. A taste of sunshine!

Ingredients:

  • For the Shrimp:
    • 1 pound large shrimp, peeled and deveined
    • 1 tablespoon olive oil
    • 1 teaspoon chili powder
    • 1/2 teaspoon cumin
    • 1/4 teaspoon smoked paprika
    • Salt and black pepper to taste
  • For the Mango Salsa:
    • 1 ripe mango, diced
    • 1/2 red onion, finely chopped
    • 1/4 cup chopped cilantro
    • 1 jalapeño, seeded and minced (adjust for desired heat)
    • 2 tablespoons lime juice
    • Salt to taste
  • For the Tacos:
    • 8 small corn tortillas, warmed
    • Your favorite taco toppings (sour cream, shredded lettuce, avocado, etc.)

Instructions:

  1. Prepare the Shrimp: In a bowl, toss shrimp with olive oil, chili powder, cumin, paprika, salt, and pepper.
  2. Cook the Shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, until pink and opaque.
  3. Make the Salsa: Combine diced mango, red onion, cilantro, jalapeño, lime juice, and salt in a bowl. Mix well and set aside.
  4. Assemble the Tacos: Fill each warmed tortilla with cooked shrimp. Top with mango salsa and your desired taco toppings.
