Spicy Shrimp Tacos with Avocado Mango Salsa

Flavorful and vibrant shrimp tacos topped with a creamy avocado mango salsa.

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ¼ tsp cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 8 small corn tortillas
  • For the avocado mango salsa:
    • 1 ripe avocado, diced
    • 1 ripe mango, diced
    • ½ red onion, finely chopped
    • ½ cup chopped cilantro
    • 2 tbsp lime juice
    • Salt and black pepper to taste

Instructions:

  1. In a bowl, combine the olive oil, chili powder, cumin, cayenne pepper, salt, and black pepper. Add the shrimp and toss to coat.
  2. Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through.
  3. Warm the tortillas in a dry skillet or microwave.
  4. To make the avocado mango salsa, combine all ingredients in a bowl and toss gently. Season with salt and pepper to taste.
  5. Assemble the tacos by placing a few shrimp on each tortilla. Top with the avocado mango salsa and serve immediately.
