Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ¼ tsp cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 8 small corn tortillas
- For the avocado mango salsa:
- 1 ripe avocado, diced
- 1 ripe mango, diced
- ½ red onion, finely chopped
- ½ cup chopped cilantro
- 2 tbsp lime juice
- Salt and black pepper to taste
Instructions:
- In a bowl, combine the olive oil, chili powder, cumin, cayenne pepper, salt, and black pepper. Add the shrimp and toss to coat.
- Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through.
- Warm the tortillas in a dry skillet or microwave.
- To make the avocado mango salsa, combine all ingredients in a bowl and toss gently. Season with salt and pepper to taste.
- Assemble the tacos by placing a few shrimp on each tortilla. Top with the avocado mango salsa and serve immediately.
