Spicy Shrimp Tacos

Ingredients:
- 1 pound large shrimp, peeled and deveined
- 1/2 cup lime juice
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
- 8 corn tortillas
- Slaw (see below)
- Avocado slices
- Lime wedges
Instructions:
- In a large bowl, whisk together lime juice, cilantro, garlic, cumin, smoked paprika, and cayenne pepper.
- Add the shrimp to the marinade and mix well. Cover and refrigerate for at least 10 minutes or up to 30 minutes.
- Heat a large skillet over medium-high heat. Remove the shrimp from the marinade, letting any excess liquid drip off.
- Cook the shrimp in batches until pink and just cooked through, about 2-3 minutes per side.
- Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Assemble the tacos by placing a few pieces of cooked shrimp onto each tortilla, then top with slaw and avocado slices.
Slaw:
- 1 cup shredded cabbage
- 1/2 cup diced red onion
- 1 jalapeño pepper, seeded and finely chopped
- 2 tablespoons lime juice
- Salt and pepper, to taste
Mix all the ingredients together in a bowl until well combined. Refrigerate for at least 30 minutes to allow flavors to meld.
Notes:
- You can also add some sliced radishes or diced tomatoes on top of the slaw for extra flavor.
- For an extra kick, sprinkle some diced jalapeño peppers onto each taco.
- Serve immediately and enjoy!
