Spicy Sesame Salmon with Coconut Lime Rice

A vibrant and flavorful dish featuring pan-seared salmon glazed with a spicy sesame sauce, served atop fluffy coconut lime rice.

Ingredients:

  • 1 lb salmon fillet, skin on
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1/2 tsp red pepper flakes
  • 1 cup cooked rice
  • 1/2 cup coconut milk
  • Juice of 1 lime
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, whisk together soy sauce, honey, sesame oil, ginger, and red pepper flakes.
  2. Place the salmon fillet in a shallow dish and pour the marinade over it, making sure both sides are coated. Marinate for at least 15 minutes.
  3. Heat a large skillet over medium-high heat. Add the marinated salmon and cook for 4-5 minutes per side, or until cooked through and flaky.
  4. While the salmon is cooking, combine the cooked rice, coconut milk, lime juice, and cilantro in a saucepan. Bring to a simmer over medium heat, stirring occasionally, until heated through. Season with salt and pepper to taste.
  5. Serve the pan-seared salmon over the coconut lime rice. Garnish with additional sesame seeds and chopped cilantro if desired.
