Ingredients:
- 1 lb salmon fillet, skin on
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tsp grated ginger
- 1/2 tsp red pepper flakes
- 1 cup cooked rice
- 1/2 cup coconut milk
- Juice of 1 lime
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions:
- In a small bowl, whisk together soy sauce, honey, sesame oil, ginger, and red pepper flakes.
- Place the salmon fillet in a shallow dish and pour the marinade over it, making sure both sides are coated. Marinate for at least 15 minutes.
- Heat a large skillet over medium-high heat. Add the marinated salmon and cook for 4-5 minutes per side, or until cooked through and flaky.
- While the salmon is cooking, combine the cooked rice, coconut milk, lime juice, and cilantro in a saucepan. Bring to a simmer over medium heat, stirring occasionally, until heated through. Season with salt and pepper to taste.
- Serve the pan-seared salmon over the coconut lime rice. Garnish with additional sesame seeds and chopped cilantro if desired.
