Spicy Salmon with Roasted Garlic & Rosemary Potatoes

A vibrant and flavorful dish featuring pan-seared salmon with a crispy skin, served alongside fluffy potatoes roasted with garlic and rosemary.

Ingredients:

  • 2 Salmon fillets (about 6 oz each)
  • 1 lb Yukon Gold potatoes, quartered
  • 4 cloves garlic, peeled and smashed
  • 2 sprigs fresh rosemary, chopped
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt and black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, smashed garlic, rosemary, salt, and pepper on a baking sheet. Roast for 30-40 minutes, or until tender and golden brown.
  3. Season salmon fillets with paprika, cumin, salt, and pepper.
  4. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear salmon fillets skin-side down for 3-4 minutes, then flip and cook for an additional 2-3 minutes, or until cooked through.
  5. Serve salmon immediately alongside roasted potatoes.
