Ingredients:
- 2 Salmon fillets (about 6 oz each)
- 1 lb Yukon Gold potatoes, quartered
- 4 cloves garlic, peeled and smashed
- 2 sprigs fresh rosemary, chopped
- 2 tbsp olive oil
- 1 tsp paprika
- ½ tsp cumin
- Salt and black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, smashed garlic, rosemary, salt, and pepper on a baking sheet. Roast for 30-40 minutes, or until tender and golden brown.
- Season salmon fillets with paprika, cumin, salt, and pepper.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear salmon fillets skin-side down for 3-4 minutes, then flip and cook for an additional 2-3 minutes, or until cooked through.
- Serve salmon immediately alongside roasted potatoes.
