Ingredients:
1 lb salmon fillet, skin removed and cut into 4 portions
1 ripe mango, diced
1/2 red onion, finely chopped
1 jalapeño pepper, seeded and minced (adjust to taste)
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1 tablespoon olive oil
Salt and black pepper to taste
1 cup quinoa, rinsed
2 cups water
1 teaspoon cumin powder
1/4 teaspoon turmeric powder
Instructions:
Cook the quinoa: In a saucepan, bring water to a boil. Add quinoa, cumin, and turmeric. Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and set aside.
Prepare the salsa: Combine diced mango, red onion, jalapeño pepper, cilantro, lime juice, olive oil, salt, and black pepper in a bowl. Mix well and set aside.
Sear the salmon: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season salmon portions with salt and pepper. Sear for 3-4 minutes per side or until cooked through.
Assemble the bowls: Divide quinoa among four bowls. Top with seared salmon and mango salsa. Serve immediately.
