Spicy Salmon Tacos with Mango Salsa

A vibrant and flavorful twist on classic tacos, featuring seared salmon, a refreshing mango salsa, and a hint of spice.

Ingredients:

  • 1 lb Salmon fillet, skin removed and cut into 1-inch pieces
  • 1 tbsp Olive oil
  • 1 tsp Cumin
  • ½ tsp Paprika
  • ¼ tsp Chilli pepper flakes
  • Salt and Black pepper to taste
  • 8 Corn tortillas
  • For the Mango Salsa:
    • 1 ripe mango, diced
    • ½ red onion, finely chopped
    • ¼ cup chopped Cilantro
    • 1 tbsp Lime juice
    • Pinch of salt

Instructions:

  1. Prepare the salsa: Combine the diced mango, red onion, cilantro, lime juice, and salt in a bowl. Mix well and set aside.
  2. Season the salmon: In a small bowl, combine olive oil, cumin, paprika, chilli pepper flakes, salt, and black pepper. Rub this mixture onto the salmon pieces.
  3. Sear the salmon: Heat a large skillet over medium-high heat. Add the seasoned salmon and cook for 2-3 minutes per side, or until cooked through and slightly browned.
  4. Warm the tortillas: Warm the corn tortillas in a dry skillet or microwave.
  5. Assemble the tacos: Fill each warmed tortilla with a few pieces of seared salmon and top generously with the mango salsa. Serve immediately.
