Ingredients:
- 1 lb Salmon fillet, skin removed and cut into 1-inch pieces
- 1 tbsp Olive oil
- 1 tsp Cumin
- ½ tsp Paprika
- ¼ tsp Chilli pepper flakes
- Salt and Black pepper to taste
- 8 Corn tortillas
- For the Mango Salsa:
- 1 ripe mango, diced
- ½ red onion, finely chopped
- ¼ cup chopped Cilantro
- 1 tbsp Lime juice
- Pinch of salt
Instructions:
- Prepare the salsa: Combine the diced mango, red onion, cilantro, lime juice, and salt in a bowl. Mix well and set aside.
- Season the salmon: In a small bowl, combine olive oil, cumin, paprika, chilli pepper flakes, salt, and black pepper. Rub this mixture onto the salmon pieces.
- Sear the salmon: Heat a large skillet over medium-high heat. Add the seasoned salmon and cook for 2-3 minutes per side, or until cooked through and slightly browned.
- Warm the tortillas: Warm the corn tortillas in a dry skillet or microwave.
- Assemble the tacos: Fill each warmed tortilla with a few pieces of seared salmon and top generously with the mango salsa. Serve immediately.
