Ingredients:
1 pound cooked salmon, flaked
½ cup cooked quinoa
¼ cup chopped red onion
1 tablespoon chopped fresh cilantro
1 egg, beaten
2 tablespoons almond flour
1 teaspoon cumin powder
½ teaspoon paprika
¼ teaspoon cayenne pepper (optional)
Salt and black pepper to taste
For the Mango Salsa:
1 ripe mango, diced
½ red bell pepper, diced
¼ cup chopped red onion
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
Pinch of salt
Instructions:
In a large bowl, combine the flaked salmon, quinoa, red onion, cilantro, egg, almond flour, cumin powder, paprika, cayenne pepper (if using), salt, and black pepper. Mix well to combine.
Form the mixture into 6 patties.
Heat a tablespoon of olive oil in a large skillet over medium heat. Cook the salmon patties for about 3-4 minutes per side, or until golden brown and cooked through.
While the patties are cooking, prepare the mango salsa by combining all the ingredients in a bowl. Mix well.
Serve the hot salmon patties topped with the fresh mango salsa.
