Ingredients:
- For the Salmon Patties:
- 1 pound cooked salmon, flaked
- ½ cup breadcrumbs
- ¼ cup chopped fresh cilantro
- 1 egg, lightly beaten
- 1 tablespoon lime juice
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper
- Salt and black pepper to taste
- For the Citrus-Ginger Salsa:
- ½ cup chopped red onion
- 1 small cucumber, diced
- 1 jalapeño pepper, finely chopped (remove seeds for less heat)
- ½ inch fresh ginger, grated
- ¼ cup chopped fresh cilantro
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions:
- Prepare the patties: In a large bowl, combine flaked salmon, breadcrumbs, cilantro, egg, lime juice, cumin, paprika, cayenne pepper, salt, and pepper. Mix well with your hands until combined.
- Form the mixture into 4-6 patties.
- Cook the patties: Heat olive oil in a large skillet over medium heat. Add the salmon patties and cook for 3-4 minutes per side, or until golden brown and cooked through.
- Make the salsa: While the patties are cooking, combine all salsa ingredients in a bowl. Mix well and season with salt and pepper to taste.
- Serve: Place the cooked salmon patties on serving plates and top generously with the citrus-ginger salsa. Enjoy!
