Spicy Salmon Patties with Citrus-Ginger Salsa

A vibrant and healthy twist on classic salmon patties, topped with a zesty salsa for an explosion of flavor.

Ingredients:

  • For the Salmon Patties:
    • 1 pound cooked salmon, flaked
    • ½ cup breadcrumbs
    • ¼ cup chopped fresh cilantro
    • 1 egg, lightly beaten
    • 1 tablespoon lime juice
    • 1 teaspoon ground cumin
    • ½ teaspoon smoked paprika
    • ¼ teaspoon cayenne pepper
    • Salt and black pepper to taste
  • For the Citrus-Ginger Salsa:
    • ½ cup chopped red onion
    • 1 small cucumber, diced
    • 1 jalapeño pepper, finely chopped (remove seeds for less heat)
    • ½ inch fresh ginger, grated
    • ¼ cup chopped fresh cilantro
    • 2 tablespoons lime juice
    • 1 tablespoon olive oil
    • Salt and black pepper to taste

Instructions:

  1. Prepare the patties: In a large bowl, combine flaked salmon, breadcrumbs, cilantro, egg, lime juice, cumin, paprika, cayenne pepper, salt, and pepper. Mix well with your hands until combined.
  2. Form the mixture into 4-6 patties.
  3. Cook the patties: Heat olive oil in a large skillet over medium heat. Add the salmon patties and cook for 3-4 minutes per side, or until golden brown and cooked through.
  4. Make the salsa: While the patties are cooking, combine all salsa ingredients in a bowl. Mix well and season with salt and pepper to taste.
  5. Serve: Place the cooked salmon patties on serving plates and top generously with the citrus-ginger salsa. Enjoy!
