Spicy Salmon Bowls with Avocado Mango Salsa

A vibrant and flavorful meal featuring pan-seared salmon, a tangy avocado mango salsa, and fluffy quinoa.

Yields: 2 servings Prep Time: 15 minutes Cook Time: 10 minutes

Ingredients:

  • 2 salmon filets (6-8 oz each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup cooked quinoa
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • Pinch of cayenne pepper (optional)

Instructions:

  1. Season salmon filets with cumin, paprika, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear salmon for 3-4 minutes per side, or until cooked through.
  3. While salmon cooks, prepare the avocado mango salsa. Combine diced mango, avocado, red onion, cilantro, lime juice, and cayenne pepper (if using) in a bowl. Season with salt and pepper to taste.
  4. Divide quinoa between two bowls. Top with cooked salmon and avocado mango salsa.
