Ingredients:
- 2 salmon filets (6-8 oz each)
- 1 tablespoon olive oil
- 1/2 teaspoon cumin powder
- 1/4 teaspoon paprika
- Salt and black pepper to taste
- 1 cup cooked quinoa
- 1 ripe mango, diced
- 1 avocado, diced
- 1/4 red onion, thinly sliced
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- Pinch of cayenne pepper (optional)
Instructions:
- Season salmon filets with cumin, paprika, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear salmon for 3-4 minutes per side, or until cooked through.
- While salmon cooks, prepare the avocado mango salsa. Combine diced mango, avocado, red onion, cilantro, lime juice, and cayenne pepper (if using) in a bowl. Season with salt and pepper to taste.
- Divide quinoa between two bowls. Top with cooked salmon and avocado mango salsa.
