Ingredients:

For the Crema:

  • 1 cup sour cream
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon chopped cilantro
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • 1 tablespoon honey

For the Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

For the Pineapple:

  • 1 ripe pineapple, cut into small chunks
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1/4 cup chopped fresh cilantro

Tacos:

  • 8-10 corn tortillas
  • Sliced radishes
  • Chopped cilantro
  • Lime wedges

Instructions:

Make the Crema:

  1. In a blender or food processor, combine sour cream, lime juice, cilantro, ginger, salt, and pepper.
  2. Blend until smooth and creamy, adding honey to taste.

Prepare the Shrimp:

  1. In a large bowl, whisk together coconut milk, fish sauce, lime juice, cumin, smoked paprika, salt, and pepper.
  2. Add shrimp and marinate for 10-15 minutes, or until they start to turn pink.

Cook the Pineapple:

  1. Heat a skillet over medium-high heat.
  2. Add brown sugar, soy sauce, and rice vinegar.
  3. Stir in pineapple chunks and cook, stirring occasionally, until caramelized and slightly charred, about 5-7 minutes.
  4. Season with salt to taste.

Cook the Shrimp:

  1. Remove shrimp from marinade, letting any excess liquid drip off.
  2. In a separate skillet or wok, heat a tablespoon of oil over medium-high heat.
  3. Add shrimp and cook until pink and just cooked through, about 2-3 minutes per side.

Assemble Tacos:

  1. Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  2. Spoon cooked shrimp onto a tortilla, followed by a chunk of pineapple and a dollop of cilantro lime crema.
  3. Top with sliced radishes, chopped cilantro, and a squeeze of lime juice.
  4. Serve immediately.
