Spicy Pineapple-Jalapeño Salsa with Crispy Plantain Chips

A sweet and spicy salsa made with fresh pineapple, jalapeños, cilantro, and a hint of lime, served with crispy plantain chips for a delicious snack or appetizer.

Ingredients

  • 1 ripe pineapple, diced
  • 2 jalapeños, seeded and finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 ripe plantains, peeled and sliced
  • Vegetable oil for frying

Instructions

Make the Salsa

  1. In a blender or food processor, combine pineapple, jalapeños, cilantro, lime juice, salt, and pepper.
  2. Blend until smooth, but still slightly chunky.
  3. Taste and adjust seasoning as needed.

Make the Crispy Plantain Chips

  1. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
  2. When the oil is hot, add a few slices of plantain to the skillet (do not overcrowd).
  3. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
  4. Remove from oil with a slotted spoon and drain on paper towels.
  5. Repeat with remaining plantain slices.

Serve

  1. Serve salsa in a bowl and garnish with additional cilantro if desired.
  2. Offer crispy plantain chips on the side for dipping into the salsa.
  3. Enjoy!
