Ingredients
- 1 ripe pineapple, diced
- 2 jalapeños, seeded and finely chopped
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 ripe plantains, peeled and sliced
- Vegetable oil for frying
Instructions
Make the Salsa
- In a blender or food processor, combine pineapple, jalapeños, cilantro, lime juice, salt, and pepper.
- Blend until smooth, but still slightly chunky.
- Taste and adjust seasoning as needed.
Make the Crispy Plantain Chips
- Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
- When the oil is hot, add a few slices of plantain to the skillet (do not overcrowd).
- Fry for about 2-3 minutes on each side, or until golden brown and crispy.
- Remove from oil with a slotted spoon and drain on paper towels.
- Repeat with remaining plantain slices.
Serve
- Serve salsa in a bowl and garnish with additional cilantro if desired.
- Offer crispy plantain chips on the side for dipping into the salsa.
