Spicy Pineapple-Jalapeño BBQ Sauce Chicken Wings
Ingredients
- 2 pounds chicken wings
- 1 cup pineapple juice
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 jalapeño pepper, seeded and finely chopped
- 1/4 cup BBQ sauce
- 2 tablespoons rice vinegar
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, whisk together pineapple juice, brown sugar, soy sauce, garlic, ginger, jalapeño, and salt.
- Add the chicken wings to the marinade and mix well. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.
- Remove the wings from the marinade, letting any excess liquid drip off. Arrange the wings on a baking sheet lined with parchment paper.
- Bake the chicken wings for 25-30 minutes or until they are cooked through and lightly browned.
- In a small saucepan, combine BBQ sauce, rice vinegar, smoked paprika, salt, and pepper. Whisk until smooth and bring to a simmer over medium heat.
- Remove the wings from the oven and toss them with the BBQ sauce mixture until well coated.
- Serve immediately and enjoy!
Variations
- For an extra crispy coating, sprinkle the wings with cornstarch or panko breadcrumbs before baking.
- To make this recipe more substantial, serve the chicken wings on a bed of coconut rice or roasted vegetables.
- For a spicy kick, add diced serrano peppers to the marinade or BBQ sauce mixture.
