Spicy Pineapple-Jalapeño BBQ Sauce Chicken Wings

Sweet, spicy, and tangy chicken wings infused with the flavors of pineapple, jalapeño, and a hint of smokiness from BBQ sauce.

Spicy Pineapple-Jalapeño BBQ Sauce Chicken Wings

Ingredients

  • 2 pounds chicken wings
  • 1 cup pineapple juice
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/4 cup BBQ sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, whisk together pineapple juice, brown sugar, soy sauce, garlic, ginger, jalapeño, and salt.
  3. Add the chicken wings to the marinade and mix well. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.
  4. Remove the wings from the marinade, letting any excess liquid drip off. Arrange the wings on a baking sheet lined with parchment paper.
  5. Bake the chicken wings for 25-30 minutes or until they are cooked through and lightly browned.
  6. In a small saucepan, combine BBQ sauce, rice vinegar, smoked paprika, salt, and pepper. Whisk until smooth and bring to a simmer over medium heat.
  7. Remove the wings from the oven and toss them with the BBQ sauce mixture until well coated.
  8. Serve immediately and enjoy!

Variations

  • For an extra crispy coating, sprinkle the wings with cornstarch or panko breadcrumbs before baking.
  • To make this recipe more substantial, serve the chicken wings on a bed of coconut rice or roasted vegetables.
  • For a spicy kick, add diced serrano peppers to the marinade or BBQ sauce mixture.
