Spicy Pineapple-Glazed Pork Chops with Roasted Vegetable Stir-Fry

A sweet and spicy twist on traditional pork chops, served with a colorful stir-fry of roasted vegetables.

Spicy Pineapple-Glazed Pork Chops with Roasted Vegetable Stir-Fry

Ingredients:

For the Glaze:

  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes (optional, for some heat)
  • 2 cloves garlic, minced

For the Pork Chops:

  • 4 pork chops (about 1 inch thick)
  • 2 tablespoons vegetable oil
  • Salt and black pepper to taste

For the Stir-Fry:

  • 2 cups mixed vegetables (such as broccoli, carrots, bell peppers, and onions)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons soy sauce
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions:

Make the Glaze:

  1. In a small saucepan, combine pineapple juice, brown sugar, soy sauce, honey, grated ginger, red pepper flakes (if using), and garlic.
  2. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer for 5-7 minutes or until thickened slightly.

Prepare the Pork Chops:

  1. In a small bowl, mix together salt, black pepper, and vegetable oil.
  2. Brush the mixture evenly onto both sides of the pork chops.

Roast the Vegetables:

  1. Preheat oven to 425°F (220°C).
  2. Toss the mixed vegetables with 1 tablespoon of vegetable oil, garlic, grated ginger, soy sauce, and honey on a baking sheet.
  3. Roast for 20-25 minutes or until tender and lightly caramelized.

Cook the Pork Chops:

  1. Preheat grill or grill pan to medium-high heat.
  2. Brush the grates with oil to prevent sticking.
  3. Grill the pork chops for 5-7 minutes per side, or until cooked through.

Assemble the Stir-Fry:

  1. In a wok or large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  2. Add the roasted vegetables and stir-fry for 2-3 minutes.
  3. Serve alongside the Spicy Pineapple-Glazed Pork Chops.

Variations:

  • For an added crunch, top the pork chops with toasted sesame seeds or chopped scallions.
  • Experiment with different types of fruit, such as mango or papaya, to create unique glaze variations.
