Spicy Pineapple-Glazed Pork Chops with Coconut Rice and Steamed Bok Choy

A sweet, spicy, and savory fusion dish that combines the flavors of pineapple, coconut, and bok choy with the tenderness of pork chops.

Spicy Pineapple-Glazed Pork Chops

Ingredients:

  • 4 (1-inch-thick) pork loin chops
  • 1 cup pineapple juice
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon red pepper flakes
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil

Instructions:

  1. Preheat grill to medium-high heat.
  2. In a blender or food processor, combine pineapple juice, brown sugar, soy sauce, rice vinegar, ginger, and red pepper flakes; blend until smooth.
  3. Grill pork chops for 5-7 minutes per side, or until slightly charred and cooked through.
  4. Meanwhile, reduce glaze mixture by half in a small saucepan over medium heat.
  5. Brush the reduced glaze onto both sides of the grilled pork chops during the last minute of cooking.

Coconut Rice

Ingredients:

  • 1 cup uncooked white rice
  • 2 cups coconut milk
  • 1 cup water
  • 1 tablespoon unsalted butter
  • Salt to taste

Instructions:

  1. In a medium saucepan, combine rice, coconut milk, and water; bring to a boil.
  2. Reduce heat to low, cover, and cook until liquid is absorbed and rice is tender.

Steamed Bok Choy

Ingredients:

  • 1 bunch bok choy
  • Salt to taste

Instructions:

  1. Bring a large saucepan of salted water to a boil.
  2. Blanch bok choy for 3-5 minutes, or until slightly wilted and tender.
  3. Drain immediately and serve hot.

Tips & Variations

  • For added heat, sprinkle a pinch of red pepper flakes on the grilled pork chops before serving.
  • Substitute chopped fresh cilantro for scallions as a garnish for the Coconut Rice and Steamed Bok Choy.
