Spicy Pineapple-Glazed Pork Chops
Ingredients:
- 4 (1-inch-thick) pork loin chops
- 1 cup pineapple juice
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 teaspoons grated fresh ginger
- 1 teaspoon red pepper flakes
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
Instructions:
- Preheat grill to medium-high heat.
- In a blender or food processor, combine pineapple juice, brown sugar, soy sauce, rice vinegar, ginger, and red pepper flakes; blend until smooth.
- Grill pork chops for 5-7 minutes per side, or until slightly charred and cooked through.
- Meanwhile, reduce glaze mixture by half in a small saucepan over medium heat.
- Brush the reduced glaze onto both sides of the grilled pork chops during the last minute of cooking.
Coconut Rice
Ingredients:
- 1 cup uncooked white rice
- 2 cups coconut milk
- 1 cup water
- 1 tablespoon unsalted butter
- Salt to taste
Instructions:
- In a medium saucepan, combine rice, coconut milk, and water; bring to a boil.
- Reduce heat to low, cover, and cook until liquid is absorbed and rice is tender.
Steamed Bok Choy
Ingredients:
- 1 bunch bok choy
- Salt to taste
Instructions:
- Bring a large saucepan of salted water to a boil.
- Blanch bok choy for 3-5 minutes, or until slightly wilted and tender.
- Drain immediately and serve hot.
Tips & Variations
- For added heat, sprinkle a pinch of red pepper flakes on the grilled pork chops before serving.
- Substitute chopped fresh cilantro for scallions as a garnish for the Coconut Rice and Steamed Bok Choy.
