Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp lime juice
- 1 tsp grated ginger
- 1/2 tsp red pepper flakes
- 1 cup cooked white rice
- 1/4 cup coconut milk
- 1 tbsp lime juice
- 1/4 cup chopped fresh cilantro
- 1/4 cup roasted peanuts, for garnish
Instructions:
Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned on all sides. Remove chicken from the pan and set aside.
In the same skillet, add bell peppers, onion, and garlic. Cook until softened, about 5 minutes.
Whisk together peanut butter, soy sauce, honey, lime juice, ginger, and red pepper flakes in a bowl. Pour sauce into the skillet with the vegetables and bring to a simmer.
Return chicken to the skillet and cook until heated through and coated in sauce, about 5 minutes.
While chicken cooks, prepare coconut lime rice: Combine cooked rice, coconut milk, and lime juice in a saucepan. Heat over low heat until warmed through.
To serve, divide rice among bowls. Top with chicken and peanut sauce. Garnish with cilantro and peanuts.
