Ingredients:

  • For the Shrimp:

    • 1 lb peeled and deveined shrimp
    • 1 tbsp olive oil
    • 1 tsp chili powder
    • ½ tsp cumin
    • ¼ tsp salt
    • ¼ tsp black pepper
    • Juice of ½ lime
  • For the Coconut-Lime Slaw:

    • 1 cup shredded green cabbage
    • ½ cup shredded carrots
    • ½ cup chopped fresh cilantro
    • ¼ cup shredded coconut
    • 2 tbsp lime juice
    • 1 tbsp olive oil
    • Salt and pepper to taste
  • For the Tacos:

    • 8 small corn tortillas
    • Mango salsa (store-bought or homemade)
    • Avocado, sliced (optional)

Instructions:

  1. Cook the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Season with chili powder, cumin, salt, pepper, and lime juice. Set aside.
  2. Make the Slaw: In a bowl, combine shredded cabbage, carrots, cilantro, coconut, lime juice, olive oil, salt, and pepper. Toss to coat.
  3. Warm the Tortillas: Heat tortillas in a dry skillet or microwave until warm and pliable.
  4. Assemble the Tacos: Fill each tortilla with cooked shrimp, slaw, mango salsa, and avocado slices (if using).
