Spicy Mango Shrimp Tacos with Coconut-Lime Slaw

Ingredients:
For the Shrimp:
- 1 lb peeled and deveined shrimp
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ¼ tsp salt
- ¼ tsp black pepper
- Juice of ½ lime
For the Coconut-Lime Slaw:
- 1 cup shredded green cabbage
- ½ cup shredded carrots
- ½ cup chopped fresh cilantro
- ¼ cup shredded coconut
- 2 tbsp lime juice
- 1 tbsp olive oil
- Salt and pepper to taste
For the Tacos:
- 8 small corn tortillas
- Mango salsa (store-bought or homemade)
- Avocado, sliced (optional)
Instructions:
- Cook the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Season with chili powder, cumin, salt, pepper, and lime juice. Set aside.
- Make the Slaw: In a bowl, combine shredded cabbage, carrots, cilantro, coconut, lime juice, olive oil, salt, and pepper. Toss to coat.
- Warm the Tortillas: Heat tortillas in a dry skillet or microwave until warm and pliable.
- Assemble the Tacos: Fill each tortilla with cooked shrimp, slaw, mango salsa, and avocado slices (if using).
