Spicy Mango French Toast Bake

Ingredients:
For the Bread:
- 1 loaf of Challah bread (12 slices)
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
For the Mango Salsa:
- 3 ripe mangos, diced
- 1 jalapeño pepper, seeded and finely chopped
- 1/4 cup red onion, thinly sliced
- 2 tbsp lime juice
- Salt to taste
For the Bacon:
- 6 slices of thick-cut bacon
- 1 tsp brown sugar
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the granulated sugar, cinnamon, and nutmeg.
- Cut the Challah bread into 12 equal-sized slices.
- Dip each slice of bread into the sugar mixture on both sides.
- Place half of the bread slices in a 9x13 inch baking dish.
- In another bowl, mix together the mango, jalapeño pepper, red onion, and lime juice.
- Pour half of the mango salsa over the bread slices in the baking dish.
- Sprinkle half of the bacon over the top.
- Repeat steps 5-8 with the remaining ingredients.
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the foil and continue baking for an additional 15-20 minutes or until golden brown.
Serving Suggestions:
Serve warm, topped with whipped cream and toasted coconut flakes.
