Spicy Mango-Cilantro Chicken Skewers

These vibrant skewers are perfect for a summer barbecue or a light weeknight meal. The sweet mangoes and zesty cilantro complement the spicy chicken beautifully!

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 ripe mango, peeled and diced
  • 1/2 cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a large bowl, combine the chicken, mango, cilantro, olive oil, lime juice, cumin, chili powder, paprika, salt, and pepper. Toss to coat evenly.
  2. Marinate the mixture for at least 30 minutes in the refrigerator (longer is better!).
  3. Preheat your grill to medium-high heat.
  4. Thread the chicken and mango onto skewers.
  5. Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
  6. Serve immediately with your favorite sides!
