Ingredients:
- 1 lb boneless, skinless chicken breasts, cubed
- 1 ripe mango, peeled and diced
- 1/2 cup chopped fresh cilantro
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- In a large bowl, combine the chicken, mango, cilantro, olive oil, lime juice, cumin, chili powder, paprika, salt, and pepper. Toss to coat evenly.
- Marinate the mixture for at least 30 minutes in the refrigerator (longer is better!).
- Preheat your grill to medium-high heat.
- Thread the chicken and mango onto skewers.
- Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
- Serve immediately with your favorite sides!
