Spicy Mango Chili Jam Tacos

A fusion of Indian and Mexican flavors, these tacos feature a sweet and spicy mango chili jam as the main filling, topped with crispy onions and cilantro.

Spicy Mango Chili Jam Tacos

Ingredients:

For the Mango Chili Jam:

  • 2 ripe mangos, diced
  • 1 cup red onion, thinly sliced
  • 1 jalapeño pepper, seeded and finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1/4 cup apple cider vinegar
  • 1/4 cup maple syrup
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

For the Taco Filling:

  • 8 corn tortillas
  • Mango Chili Jam (above)
  • Crispy onions (see below)
  • Chopped cilantro

Instructions

Make the Mango Chili Jam:

  1. In a blender, puree the mango until smooth.
  2. In a large pan over medium heat, combine the sliced onion and chopped jalapeño. Cook for 5 minutes or until softened.
  3. Add the garlic, ginger, cumin, salt, and pepper to the pan and cook for another minute.
  4. Stir in the mango puree, apple cider vinegar, and maple syrup.
  5. Bring the mixture to a boil and then reduce heat to low, simmering for 10-15 minutes or until thickened.

Make Crispy Onions:

  1. Slice 1/2 cup of red onion thinly.
  2. Heat 1 tablespoon of oil in a pan over medium-high heat.
  3. Add the sliced onions and cook for 5-7 minutes on each side or until golden brown and crispy.

Assemble the Tacos:

  1. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  2. Spread a spoonful of mango chili jam onto each tortilla.
  3. Top with crispy onions, chopped cilantro, and serve immediately.
