Spicy Mango Chili Jam Tacos
Ingredients:
For the Mango Chili Jam:
- 2 ripe mangos, diced
- 1 cup red onion, thinly sliced
- 1 jalapeño pepper, seeded and finely chopped
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1/4 cup apple cider vinegar
- 1/4 cup maple syrup
- 1 teaspoon ground cumin
- Salt and pepper to taste
For the Taco Filling:
- 8 corn tortillas
- Mango Chili Jam (above)
- Crispy onions (see below)
- Chopped cilantro
Instructions
Make the Mango Chili Jam:
- In a blender, puree the mango until smooth.
- In a large pan over medium heat, combine the sliced onion and chopped jalapeño. Cook for 5 minutes or until softened.
- Add the garlic, ginger, cumin, salt, and pepper to the pan and cook for another minute.
- Stir in the mango puree, apple cider vinegar, and maple syrup.
- Bring the mixture to a boil and then reduce heat to low, simmering for 10-15 minutes or until thickened.
Make Crispy Onions:
- Slice 1/2 cup of red onion thinly.
- Heat 1 tablespoon of oil in a pan over medium-high heat.
- Add the sliced onions and cook for 5-7 minutes on each side or until golden brown and crispy.
Assemble the Tacos:
- Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Spread a spoonful of mango chili jam onto each tortilla.
- Top with crispy onions, chopped cilantro, and serve immediately.
