Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 1 jalapeño pepper, seeded and minced (optional)
- 1 tablespoon olive oil
- 4 cups cooked quinoa or brown rice
Instructions:
- Season chicken with cumin, paprika, salt, and black pepper. Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook chicken until golden brown and cooked through, about 8-10 minutes.
- In a bowl, combine diced mango, avocado, red onion, cilantro, lime juice, and jalapeño (if using). Season with salt to taste.
- Divide quinoa or rice among four bowls. Top with cooked chicken and mango-avocado salsa. Drizzle with remaining olive oil.
