Spicy Mango-Avocado Salsa Chicken Bowls

A vibrant and flavorful dish featuring juicy chicken, creamy avocado, sweet mango, and a zesty cilantro lime salsa. Perfect for a quick and healthy weeknight meal!

Yields: 4 servings Prep time: 15 minutes Cook time: 20 minutes

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1 ripe mango, diced
  • 1 ripe avocado, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 jalapeño pepper, seeded and minced (optional)
  • 1 tablespoon olive oil
  • 4 cups cooked quinoa or brown rice

Instructions:

  1. Season chicken with cumin, paprika, salt, and black pepper. Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook chicken until golden brown and cooked through, about 8-10 minutes.
  2. In a bowl, combine diced mango, avocado, red onion, cilantro, lime juice, and jalapeño (if using). Season with salt to taste.
  3. Divide quinoa or rice among four bowls. Top with cooked chicken and mango-avocado salsa. Drizzle with remaining olive oil.
