Spicy Honey-Glazed Salmon with Roasted Carrots and Rosemary

A vibrant and flavorful dish featuring succulent salmon glazed with a sweet and spicy honey mixture, paired with roasted carrots and aromatic rosemary.

Ingredients:

  • 2 salmon filets (6-8 ounces each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1/2 teaspoon red pepper flakes
  • 1 pound carrots, peeled and chopped into 1-inch pieces
  • 1 tablespoon fresh rosemary, chopped
  • 1 lemon, cut into wedges (for serving)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together olive oil, salt, pepper, honey, soy sauce, and red pepper flakes.
  3. Place salmon filets on the prepared baking sheet and pour half of the honey-soy mixture over them, ensuring both sides are coated.
  4. Arrange carrots around the salmon filets and drizzle with the remaining honey-soy mixture. Sprinkle with chopped rosemary.
  5. Roast for 15-20 minutes, or until salmon is cooked through and flakes easily with a fork, and carrots are tender.
  6. Serve immediately with lemon wedges.
