Ingredients:
- 2 salmon filets (6-8 ounces each)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1/2 teaspoon red pepper flakes
- 1 pound carrots, peeled and chopped into 1-inch pieces
- 1 tablespoon fresh rosemary, chopped
- 1 lemon, cut into wedges (for serving)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together olive oil, salt, pepper, honey, soy sauce, and red pepper flakes.
- Place salmon filets on the prepared baking sheet and pour half of the honey-soy mixture over them, ensuring both sides are coated.
- Arrange carrots around the salmon filets and drizzle with the remaining honey-soy mixture. Sprinkle with chopped rosemary.
- Roast for 15-20 minutes, or until salmon is cooked through and flakes easily with a fork, and carrots are tender.
- Serve immediately with lemon wedges.
