Spicy Ginger-Garlic Shrimp Skewers with Pineapple Salsa

These vibrant skewers are bursting with flavor, perfect for a summer barbecue or a light weeknight meal.

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 tsp sesame oil
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper to taste

For the Pineapple Salsa:

  • 1 cup diced pineapple
  • 1/2 red bell pepper, finely chopped
  • 1/4 cup chopped red onion
  • 1 jalapeno pepper, seeded and minced (optional)
  • 2 tbsp fresh lime juice
  • 1/4 cup chopped fresh mint
  • Salt and black pepper to taste

Instructions:

  1. In a medium bowl, whisk together the soy sauce, rice vinegar, honey, ginger, garlic, sesame oil, cilantro, salt, and black pepper. Add the shrimp and marinate for at least 15 minutes.
  2. While the shrimp marinates, prepare the pineapple salsa by combining all ingredients in a bowl. Season with salt and black pepper to taste.
  3. Preheat your grill or broiler to medium-high heat. Thread the marinated shrimp onto skewers (soaked in water for 30 minutes to prevent burning). Grill for 2-3 minutes per side, or until pink and cooked through.
  4. Serve the grilled shrimp skewers immediately with a generous dollop of pineapple salsa.
