Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp grated ginger
- 2 cloves garlic, minced
- 1 tsp sesame oil
- 1/4 cup chopped fresh cilantro
- Salt and black pepper to taste
For the Pineapple Salsa:
- 1 cup diced pineapple
- 1/2 red bell pepper, finely chopped
- 1/4 cup chopped red onion
- 1 jalapeno pepper, seeded and minced (optional)
- 2 tbsp fresh lime juice
- 1/4 cup chopped fresh mint
- Salt and black pepper to taste
Instructions:
- In a medium bowl, whisk together the soy sauce, rice vinegar, honey, ginger, garlic, sesame oil, cilantro, salt, and black pepper. Add the shrimp and marinate for at least 15 minutes.
- While the shrimp marinates, prepare the pineapple salsa by combining all ingredients in a bowl. Season with salt and black pepper to taste.
- Preheat your grill or broiler to medium-high heat. Thread the marinated shrimp onto skewers (soaked in water for 30 minutes to prevent burning). Grill for 2-3 minutes per side, or until pink and cooked through.
- Serve the grilled shrimp skewers immediately with a generous dollop of pineapple salsa.
