Spicy Coconut Shrimp Skewers with Mango Salsa

A burst of flavor! These skewers combine succulent shrimp marinated in a spicy coconut milk blend with a vibrant mango salsa. Perfect for a summer barbecue or a light weeknight meal.

Spicy Coconut Shrimp Skewers with Mango Salsa

Yields: 4 servings Prep time: 20 minutes Cook time: 10 minutes

Ingredients:

  • For the Shrimp:

    • 1 lb large shrimp, peeled and deveined
    • 1/4 cup coconut milk
    • 1 tablespoon lime juice
    • 1 tablespoon soy sauce
    • 1 teaspoon grated ginger
    • 1/2 teaspoon red pepper flakes (adjust to taste)
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
  • For the Mango Salsa:

    • 1 ripe mango, diced
    • 1/2 cup red onion, finely chopped
    • 1/4 cup cilantro, chopped
    • 1 jalapeño pepper, seeded and minced (optional)
    • 1 tablespoon lime juice
    • 1/4 teaspoon salt

Equipment:

  • Skewers (soaked in water for 30 minutes)

Instructions:

  1. Marinate the Shrimp: In a bowl, combine coconut milk, lime juice, soy sauce, ginger, red pepper flakes, salt, and pepper. Add shrimp and marinate for at least 15 minutes.
  2. Prepare the Mango Salsa: In a separate bowl, combine mango, onion, cilantro, jalapeño (if using), lime juice, and salt. Mix well.
  3. Thread Shrimp onto Skewers: Thread marinated shrimp onto skewers, leaving a small space between each piece.
  4. Grill or Pan-Fry: Grill skewers over medium heat for 2-3 minutes per side, or pan-fry in a lightly oiled skillet over medium heat for 3-4 minutes per side. Shrimp should be pink and opaque when cooked through.
  5. Serve: Arrange cooked shrimp skewers on a platter and top with mango salsa. Serve immediately.
