Spicy Coconut Shrimp Skewers with Mango Salsa

Ingredients:
For the Shrimp:
- 1 lb large shrimp, peeled and deveined
- 1/4 cup coconut milk
- 1 tablespoon lime juice
- 1 tablespoon soy sauce
- 1 teaspoon grated ginger
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For the Mango Salsa:
- 1 ripe mango, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 jalapeño pepper, seeded and minced (optional)
- 1 tablespoon lime juice
- 1/4 teaspoon salt
Equipment:
- Skewers (soaked in water for 30 minutes)
Instructions:
- Marinate the Shrimp: In a bowl, combine coconut milk, lime juice, soy sauce, ginger, red pepper flakes, salt, and pepper. Add shrimp and marinate for at least 15 minutes.
- Prepare the Mango Salsa: In a separate bowl, combine mango, onion, cilantro, jalapeño (if using), lime juice, and salt. Mix well.
- Thread Shrimp onto Skewers: Thread marinated shrimp onto skewers, leaving a small space between each piece.
- Grill or Pan-Fry: Grill skewers over medium heat for 2-3 minutes per side, or pan-fry in a lightly oiled skillet over medium heat for 3-4 minutes per side. Shrimp should be pink and opaque when cooked through.
- Serve: Arrange cooked shrimp skewers on a platter and top with mango salsa. Serve immediately.
