Spiced Sweet Potato and Black Bean Burgers

A delicious and healthy vegetarian burger option featuring sweet potatoes, black beans, and warming spices.

Ingredients:

  • 2 large sweet potatoes, peeled and diced
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 cup rolled oats
  • 1/4 cup chopped cilantro
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste
  • Olive oil for cooking

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the sweet potatoes, black beans, oats, cilantro, cumin, paprika, chili powder, cayenne pepper (if using), salt, and pepper. Mash with a fork or potato masher until well combined but still slightly chunky.
  3. Form the mixture into 4 patties.
  4. Heat olive oil in a large skillet over medium heat. Cook the burgers for 5-6 minutes per side, or until golden brown and heated through.
  5. Serve on buns with your favorite burger toppings such as lettuce, tomato, avocado, and sriracha mayo.
