Ingredients:
- 2 large sweet potatoes, peeled and diced
- 1 (15-ounce) can black beans, rinsed and drained
- 1/2 cup rolled oats
- 1/4 cup chopped cilantro
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and freshly ground black pepper to taste
- Olive oil for cooking
Instructions:
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, combine the sweet potatoes, black beans, oats, cilantro, cumin, paprika, chili powder, cayenne pepper (if using), salt, and pepper. Mash with a fork or potato masher until well combined but still slightly chunky.
- Form the mixture into 4 patties.
- Heat olive oil in a large skillet over medium heat. Cook the burgers for 5-6 minutes per side, or until golden brown and heated through.
- Serve on buns with your favorite burger toppings such as lettuce, tomato, avocado, and sriracha mayo.
