Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 ripe watermelon, cubed
- 1 red onion, thinly sliced
- 1 jalapeño pepper, seeded and finely diced (optional)
- 2 tablespoons olive oil
- 1 tablespoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon cinnamon
- ¼ teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
For the Lime-Avocado Crema:
- 1 ripe avocado, mashed
- ½ cup plain Greek yogurt
- ¼ cup fresh lime juice
- 1 tablespoon chopped cilantro
- Pinch of salt
Instructions:
- In a bowl, combine olive oil, cumin, paprika, cinnamon, cayenne pepper (if using), salt, and black pepper. Add the shrimp and toss to coat. Marinate for at least 30 minutes.
- Thread watermelon cubes, red onion slices, jalapeño (if using), and marinated shrimp alternately onto skewers.
- Preheat grill or broiler to medium-high heat. Grill skewers for 2-3 minutes per side, until shrimp are pink and opaque.
- While grilling the skewers, prepare the crema by blending together avocado, yogurt, lime juice, cilantro, and salt until smooth. Adjust seasoning to taste.
- Serve skewers hot with a dollop of lime-avocado crema.
