Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 medium sweet potatoes, peeled and cut into 1-inch cubes
- 1 red bell pepper, seeded and cut into 1-inch pieces
- 1/4 cup olive oil
- 1 tablespoon cumin powder
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup plain Greek yogurt
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 1 tablespoon honey
Instructions:
- Marinate the Shrimp and Vegetables: In a large bowl, combine olive oil, cumin powder, paprika, garlic powder, salt, and black pepper. Add the shrimp and sweet potato cubes, tossing to coat evenly. Marinate for at least 30 minutes or up to overnight in the refrigerator.
- Prepare the Cilantro-Lime Yogurt Sauce: In a small bowl, whisk together Greek yogurt, cilantro, lime juice, and honey until smooth. Set aside.
- Assemble Skewers: Thread marinated shrimp, sweet potatoes, and bell peppers onto skewers, alternating ingredients.
- Grill or Bake: Preheat grill to medium-high heat or oven to 400°F (200°C). Grill skewers for 5-7 minutes per side, or bake for 15-20 minutes, turning halfway through, until shrimp are pink and cooked through and sweet potatoes are tender.
- Serve: Remove skewers from grill or oven and serve immediately with cilantro-lime yogurt sauce. Garnish with additional chopped cilantro if desired.
