Ingredients:
- 1 pound peeled and deveined shrimp
- 1 cup cubed fresh pineapple
- 1 red bell pepper, seeded and cut into chunks
- 1/4 cup coconut milk
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions:
- In a large bowl, combine the shrimp, pineapple, and bell pepper.
- Whisk together the coconut milk, lime juice, honey, ginger, cumin, cayenne pepper (if using), salt, and black pepper in a separate bowl. Pour the marinade over the shrimp mixture and toss to coat.
- Thread the marinated shrimp, pineapple, and bell pepper onto the soaked skewers.
- Preheat your grill to medium-high heat or preheat your oven broiler.
- Grill the skewers for 2-3 minutes per side, or broil them in the oven for 4-6 minutes, until the shrimp are pink and cooked through.
- Serve immediately with extra lime wedges and cilantro sprigs for garnish.
