Spiced Shrimp & Mango Salsa Tacos with Coconut-Lime Crema

A vibrant and flavorful twist on classic tacos!

Yields: 4 servings Prep Time: 20 minutes Cook Time: 15 minutes

Ingredients:

  • 1 pound large shrimp, peeled and deveined

  • 1 tablespoon olive oil

  • 1 teaspoon ground cumin

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon cayenne pepper (optional)

  • Salt and black pepper to taste

  • 1 ripe mango, diced

  • 1 red bell pepper, diced

  • 1/2 red onion, finely chopped

  • 1/4 cup chopped fresh cilantro

  • 1 jalapeño pepper, seeded and minced (optional)

  • Juice of 1 lime

  • 8 corn tortillas

  • Toppings: shredded cabbage, avocado slices, crumbled queso fresco (optional)

Coconut-Lime Crema:

  • 1/2 cup full-fat coconut milk
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon honey

Instructions:

  1. Prepare the shrimp: In a bowl, toss the shrimp with olive oil, cumin, paprika, cayenne pepper (if using), salt, and black pepper.

  2. Cook the shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, until pink and opaque. Set aside.

  3. Make the salsa: In a bowl, combine the diced mango, bell pepper, red onion, cilantro, jalapeño (if using), and lime juice. Season with salt to taste.

  4. Prepare the crema: In a small bowl, whisk together the coconut milk, yogurt, lime juice, and honey until smooth.

  5. Warm the tortillas: Heat the corn tortillas in a dry skillet or microwave until warm and pliable.

  6. Assemble the tacos: Fill each tortilla with a generous amount of shrimp, mango salsa, and a dollop of coconut-lime crema. Top with shredded cabbage, avocado slices, and crumbled queso fresco (if desired).
