8 corn tortillas

Coconut-Lime Crema:
- 1/2 cup full-fat coconut milk
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- 1 teaspoon honey
Instructions:
Prepare the shrimp: In a bowl, toss the shrimp with olive oil, cumin, paprika, cayenne pepper (if using), salt, and black pepper.
Cook the shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, until pink and opaque. Set aside.
Make the salsa: In a bowl, combine the diced mango, bell pepper, red onion, cilantro, jalapeño (if using), and lime juice. Season with salt to taste.
