Spiced Salmon with Roasted Sweet Potato & Pistachio Salsa

A vibrant and healthy dish featuring perfectly spiced salmon paired with a sweet and savory pistachio salsa.

Ingredients:

  • 2 salmon fillets (6 oz each)
  • 1 large sweet potato, peeled and diced
  • 1/4 cup chopped pistachios
  • 1/4 cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1/2 tsp cumin powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, cumin, paprika, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  2. While the sweet potatoes are roasting, season salmon fillets with salt and black pepper. Heat a drizzle of olive oil in a skillet over medium heat. Cook salmon for 3-4 minutes per side, or until cooked through.
  3. In a bowl, combine roasted sweet potatoes, chopped pistachios, crumbled feta cheese, and a squeeze of lemon juice.
  4. Serve the cooked salmon fillets topped with the pistachio salsa.
